

Have you ever had the mixed cookie varietys pack from Costco? My favorite in this pack are the chocolate chip cookies, but a close second (and my husband’s favorite) are the White Chocolate Macadamia Nut cookies.
We don’t buy them often, but for an event (or at our church luncheon) they are a favorite, so this Christmas when deciding what varieties of cookies to bake I decided to create this recipe!
They’re simple to make, and require only one bowl. I have even made these using cold (not room temp) butter, you just need to break it into chunks before whipping it together with the butter with a mixer.

A commenter asked me how long to cream the butter and sugar for, and the answer to this depends on the temperature of your butter and the speed of your mixer. For cold butter, on a low – med speed mixer I did about 5 minutes, but if you are using room temperature butter it may take only 2-3 minutes.

White Chocolate Macadamia Nut Cookie Recipe:
– 2 sticks butter
– 3/4 c brown sugar
– 1/2 c white sugar
– 1 egg
– splash of vanilla
– pinch of salt
– 1 tsp baking soda
– 2 c flour
– 1/2 c macademia nuts
– 1 (or 2) bars white chocolate
Preheat oven to 375F. Mic together butter and sugars. Add the rest of ingredients and mix together with your hands. Roll balls or scoop cookies onto parchment lined baking sheet and bake for 10 min. Cool 10 min before serving.
