
Our local farm had the most beautiful multicolored radishes, and while they are okay on buttered bread I really wanted to experiment with radishes and make a new recipe.
Taking the base of a yogurt dill cucumber salad, the radishes add a really nice taste and texture to this recipe.

The dressing is light and you can add (or leave out) ingredients to suit your preference.
Fresh dill complements this very well, and white vinegar or red wine vinegar would work just as well as the cider vinegar I have used here.
Cucumber and Radish Salad Recipe:
– 6 small cucumbers chopped
– 1 bunch radishes chopped
– (optional) 1/2 red onion chopped
– 1/4 c yogurt
– 2 tbsp apple cider vinegar
– 1/4 tsp salt
– 2 tbsp chopped fresh dill
– 2 tbsp good olive oil
Mix all ingredients in a bowl and refrigerate until you are ready to serve!
