Chicken Salad Recipe

Chicken salad is a great summer lunch or dinner that you can cook without heating up the house!

I often use leftover chicken or a grocery store rotisserie chicken for this. It’s easy and simple, and you can adjust the recipe to your liking.

Sometimes we add celery or red onion, but to keep it kid-friendly I find the grapes and sweet pickle relish are best.

The vinegar gives the chicken salad a nice tang, and this is great served atop a green salad, on a croissant as a sandwich, or with crackers.

If you’re hosting a lunch this summer, chicken salad is also a nice dish to serve alongside tuna and egg salad.

Chicken Salad Recipe 🍇 :

– 1 chicken cooked

– 1 cup grapes

– 3/4 c mayo

– 4 sprigs fresh thyme

– 1 tbsp rice vinegar

– salt and pepper

– 2 tbsp sweet pickle relish

Shred your chicken in a bowl, add the rest of the ingredients and refrigerate until you are ready to serve!
