Avocado Black Bean Salad

It’s currently midwinter and I am craving something fresh after all the soups, stews, preserves, and ferments we eat seasonally.

In Summer, Cowboy Caviar (a similar salad) is one of my favorites and so I decided to put together a winter version with items in the fridge and freezer.

This is a great healthy lunch idea, perfect dip for tortilla chips or pita chips, or a great addition to a salad or side dish with chicken.

Avocado Black Bean Salad:

– 2 avocados

– juice of 1 lemon

– 1/2 can chopped pineapple

– 1 can black beans

– 1/2 cup frozen corn

– 1/2 cup shredded mozzarella

– salt

Mix and serve! Such a good lunch with crackers or pita chips.
