Chicken Sausage Kale and White Bean Soup Recipe

Now I’ve had many variations of this recipe and you can switch it out how you like, spinach for the kale or spicy sausage if you prefer. One thing I do know is that this cozy soup recipe is a keeper!

Chicken Sausage Kale and White Bean Soup Recipe:

– 1 onion

– 2 stalks celery

– 2 carrots

– 1 lb chicken sausage

– 3 qts broth

– 1 can white beans

– season to taste (bay leaf, garlic, rosemary, salt and pepper are good) 

– 1.5 cups kale

– 2 tbsp olive oil

Chop your veg and saute over medium heat in olive oil in the bottom of your soup pan until slightly browned and onions translucent. Add the rest of your ingredients, reserving the beans and kale til the end. Cook until the carrots are just softened, about 20-30 minutes. Add the kale and white beans and cook five minutes more. Serve and enjoy!
