Easy Cheese Sauce

This Easy Cheese Sauce recipe is so versatile, it can be adapted into queso, Mac and cheese sauce, a topping for vegetables or potatoes, or another cheese dip.

It is essentially a cheddar bechamel, and the directions are easy and as follows:

Cheese Sauce Recipe:

– 4 tbsp butter

– 1/4 cup flour

– 4 cups milk

– 4 cups cheddar cheese

– Seasonings (for queso use oregano, cumin, smoked paprika, garlic powder, dried cilantro)

Instructions:

Melt your butter over medium heat. Add half the flour and stir; when it melts into the butter, add the other half.

When that begins to bubble, add your milk and stirring occasionally, let that heat up.

When it is warm, you can begin adding your cheese about 1 cup at a time. Stir until it just boils then turn off; it will thicken more as it cools. Season and serve as you like!

Some extra tips:

  • Use leftover cheese board cheese to make your sauce
  • Don’t let your roux (the butter and flour mixture) get dark like if you were making Cajun food, keep it just barely cooked
  • Try not to boil or scald your milk, just simmer it gently and slowly.
