Big Batch Granola Recipe

I’ve been making this granola for years and loving it, but it just occurred to me that I could make a double batch and vacuum seal it, build up a little stock in my cupboard so I don’t have to turn the oven on and make granola in the heat this summer.

My Mother in Law also makes and loves granola; she uses fresh chopped almonds and they’re a great substitute for the pecans if you like almond flavor!

Substitute whatever dried fruits, nuts, oils, and sweetener you like though the granola makes the best chunk pieces when you use half honey half maple syrup as listed below.

Storage tips: this granola stores best in an airtight container. You can freeze or vacuum seal it, but we go through it fast so I usually just store it in a large glass jar (a giant canned peach jar from Costco, IYKYK)

I also love this container from OXO which we store our coffee in, and it would be great for granola too.

One thing that is important to note is that you definitely want to use parchment paper to line your baking pans for this recipe. I’ve tried it without and it sticks badly due to the honey and maple syrup. With the parchment paper it comes off easily and you still get those nice granola chunks.

Another important tip is letting it cool before eating or storing. Now we always sneak tastes before it’s fully cool, but you want to leave most of it cooling so you get granola chunks.

Allowing the granola to cool is also important for storage because you don’t want it to get steamy (and then soggy) inside your storage container.

For a last tip, if you are using dried fruit I recommend soaking it in hot water first, or adding it afterwards once the granola is made. I’ve made the mistake of skipping this step and ended up with hard burnt little raisins that were rock solid to bite into!

Homemade Granola Recipe:

– 6 cups oats

– 1 tsp cinnamon

– 1.5 tsp salt

– 1/2 cup peanut oil

– 1/2 cup maple syrup

– 1/2 cup honey

– 3/4 cup pecans

– 1/2 cup dried cranberries 

– 1 tsp vanilla

Preheat oven to 350F. Soak cranberries in hot water. Mix the rest of your ingredients together in a bowl then drain cranberries and add. Place on a parchment lined baking sheet and bake 15-20 min. Let cool 10 min before breaking into chunks!
