Sweetgreen Princeton Hosts its Grand Opening

There’s a new sweetgreen opening in MarketFair Princeton, a win for healthy fast casual food lovers in Mercer county.

The grand opening party on Saturday, September 19, 2026 brought out members of the community and local businesses to celebrate together.

Inside the New Store

The store is both cozy and modern, with wood paneling and grey stone floors and woven benches, I loved that the materials used were natural and reflected the natural less processed food values of the chain.

sweetgreen uses local ingredients from farmers they know and trust to bring carefully crafted and thoughtfully sourced salads, warm bowls, and protein plates to Princeton.

In the store, sweetgreen employees were making their beautiful bowls and wraps. Most popular menu items include the fall harvest bowl, miso salmon, and (controversially) their chicken Caesar wraps.

Some on social media criticized the wrap for being normal sized not overstuffed, and for using a healthier and smaller amount of Caesar dressing.

In my opinion it was a flavorful wrap, I loved the Parmesan crispies, and you can always ask for extra chicken if you need a bigger portion.

They had a lot of healthy favorites and good options for kids including chicken and sweet potato and chicken and ranch plates. As a mom of six, I love when a kids meal has healthy options.

The healthier dressings are plentiful, they have: balsamic vinaigrette, green goddess ranch, spicy cashew, pesto vinaigrette, lime cilantro jalapeño, hot honey mustard, miso sesame ginger, citrus sesame vinaigrette. You can choose up to three and ask for light, medium, or heavy.

There was a dedicated section for takeout and to-go orders, which I expect will be popular especially among the university and young professional crowd.

The store is currently hiring — so if you know someone looking, pass the info along.

Local Businesses at the Party

BloomBox Flowers was at the opening and did a build your own flower bouquet bar. Attendees could build a free bouquet or choose from some beautiful pre-made ones, one of which is currently gracing my dining room table for us to enjoy long after the event itself.

There was a great local nonprofit there called Share My Meals, a food rescue organization. Their mission is to fight against food waste and food insecurity by rescuing good food that would otherwise go to waste and getting it to families who need it. sweetgreen donated one meal for every meal sold on opening day.

Nicholas Creamery was there with tomato ice cream. Everyone was excited to try it, and I loved the idea of using garden state produce in our ice cream. To me, the tomato tasted like strawberry, and the cream and sugar ratio in his ice cream is delicious.

Ooika was there too with their fresh ground matcha. They had an actual stone grinding setup, and poured fresh matcha drinks right there at the booth. I had a new decaf matcha like drink called houjicha that I’ve never tried, and it was absolutely delicious.

If you’re in the Princeton area, definitely go check it out. The new location is at MarketFair in Princeton, NJ.
